I think I screwed it up somehow - I ended up with cheesey tofu quiche. :P Is that how it's supposed to be? I think next time, I'll make a regular cheese sauce - no eggs - then mix it with the tofu and bake it.

It was still delicious!

Kristine-

What kind of tofu did you use? I used a firm or extra-firm (can't remember) tub-style tofu. I drained it then squeezed out some excess water with it wrapped in a paper towel. I don't think the aseptic packed tofu would work as well for this recipe. I'm glad it still tasted good anyway! My vegetarian sister is in town this weekend, so I might make it while she's here.

so..I have only ever bought the silken tofu! lol

guess I will try it with that first anyway squeezing the wet from it first. I hope its still yummy.

I made this with the eggs in it....found it a bit too quiche like. Tried it again tonight with 1/4 cup cream (approx) and the rest of ingredients (think I added more cheddar though). Much better....very tasty!!!!

Mullo, I got the same results when I made it tonight. It sure did taste good, though! Next time maybe more cream or even a tad of butter??

Thanks Caverjen for the recipe. Now I know how to do Tofu instead of just for Miso soup!

OOOPS.....forgot to mention that I left out the eggs in the try last night and won't use eggs ever again for this...much more creamy...MMMMM........will try to add tuna or some type of protein to it also next time.....

hmmmm.... I made this today, I wasn't too crazy about it. Maybe I'll try it without the eggs next time... it came out looking like scrambled eggs, is that right??

It does look like scrambled eggs if you mash up the tofu. My younger daughter didn't want to try it because she doesn't like scrambled eggs. So last time I made it I cut up the tofu into small strips. It turned out more like macaroni and cheese, with the tofu as the macaroni. My vegetarian sister said, "this would be good over pasta."

Thanks! I think cutting it into strips might help a lot. I'm really big on textures when it comes to food, so that's probably why I didn't like this too much, being all mashed up. I'm weird like that, if something has a good flavour, but I don't like the texture, I won't eat it.

I just made this last night and it was very tasty and super easy!

Great recipe!

Also reheated some leftovers in the microwave and they were yummy too!

Here's the FitDay numbers-
1 pound extra firm tofu (500gr) 7.10 gr.
2 cups grated cheddar cheese 3.56 gr.
2 eggs 1.22 gr.
1/4 cup cream 1.66 gr.
salt and garlic powder (to taste)
1/2 tsp. garlic powder .88 gr.
fresh garlic is much lower in carb
Total 14.42 gr. or 3.60 per serv.
Take out the eggs and you've got 3.3 gr. per serv.

Wow, not many carbs for such a great dish!
