Default Help with boxed lunches?

Hello All,

I was wondering if you could all make suggestions for box lunches that are fairly cheap but also stick to the Atkins plan. My mom and step dad have joined me in Atkins, but my step dad works in construction and doesn't make enough to eat out all the time. He needs to pack lunches that are satisfying, fairly easy to make, and are allowed during induction.

Ok people, let's put our heads together.

I've already suggested things like string cheese, jerkey, celery, pork rinds, etc for a snack, and that he cook something and bring the leftovers in a plasticware container.

So what ideas can everyone help me with?

He will do better on induction bringing his lunch than eating out!! First of all salad is very portable - heap it with meats and some cheese. Load up that salad with chicken or tuna salad(of course in order to keep food cold will need a cooler!), deviled eggs, the sky is the limit! Check out the recipe forum for great hints..Good Luck!

DS takes vienna sausage in cans, plus his bottled water. Satisfying to him, and holds him until after school.

He loves deviled eggs, but those are harder to make than sandwiches right?

Hi PT,

Deviled eggs are a snap to make. Halve the boiled egg lengthwise, spoon out the yoke; mash the yoke with mayo and a little mustard, then spoon the mixture into the hollowed out part of the egg. You can add spices, garlic, etc.

Or, if a sandwich is preferred, he could roll cheeses in lunch meats.

Just a couple of suggestions Hope they help!

As for food that tastes good cold...

Doreen on this forum has posted this WONDERFUL recipe that has been a lifesaver for me:

Lime-Garlic-Ginger-Sesame Chicken Thighs

I usually make this dish with chicken breasts instead. Quote from Doreen: "Total carbs, around 10, so just over 1 carb gram per piece. This is so good cold, I intentionally make leftovers." I do too, I make huge batches of this. Yum! Perfect to snack on.

Marinating meat is so simple. Just toss together the marinade ingredients, put the meat or poulty in a double plastic bag, pour over the marinade, tie a knot and leave in the fridge overnight. Then ovenbake or fry. It's SO GOOD! And most marinated meats are delicious cold in sallads.

I like to roll meat and cheese up in a large romaine lettuce leaf with mayo or mustard, or even egg salad.

Hard-boiled eggs, ham and cream-cheese roll-ups... many more ideas from the recipe section of this forum can be used.
