Default Coffee Cake/ Carbquik

Low Carb Coffee Cake 15 servings

Topping:
1 cup almond flour
2 teaspoon cinnamon
1/2 cup splenda
1/2 stick butter

8 oz cream cheese
1.5 stick unsalted butter
4 eggs
1 tablespoon vanilla extract
1.5 cups splenda
3 cups carbquik
1/2 teaspoon baking powder

Preheat oven to 350 degrees. Blend topping ingredients just until crumbly. Set aside.
Nuke cream cheese and butter to soften. Stir in eggs and vanilla extract, mixing well. Add splenda, carbquik and baking powder and stir. There may be a few small lumps. Pour batter into 9x13 pan. Sprinkle topping over and bake for 45 minutes.
255 calories/ 23g fat/ 10g fiber/ 6 net carbs (16)

Default Sour Cream Coffee Cake - smaller

If you don't want to make a big coffee cake - this works in a 9"x9" pan

Low Carb Coffee Cake 9 servings
