today at the grocery store, i was seriously bummed to only find turkey bacon left in the applegate section- and some funky low fat pork bacon???
otherwise, all they had was oscar meyer or smtihfield.
i was annoyed, knowing that to make a dinner i have planned for the week- wilted spinach with steamed eggs on top, crumbled bacon and goat cheese), i would now have to stop at whole foods, too.

imagine my happy dance when i got to the meat counter and in the "artisan meat" bin where they had some duck bacon, someone left a package of normal applegate bacon!!!!!!!!!!!!!! SCORE!!!!!!!!!!!!!!

Glad you found that Applegate bacon but boy is it expensive....

it sure is- but the fancy duck bacon was $10 for a pack of 12 strips!!!
and HA! yeah, you know you live in a fancy neighborhood, when Giant sells artisan duck bacon
makes applegate seem downright reasonable.

cut the raw bacon in half and basketweave into a 3x3 square, then bake it in the oven 'til it's done


then take your slice(s) of cheese and put them between 2 weave pieces and warm it in a pan either on the stove or under the broiler until the cheese is your desired amount of meltiness

(this is a 4x5 but you get the idea)

For some reason this thread reminds me of Devils on Horseback today...I see many different recipes under the same name...the ones that are not LC are bacon wrapped dates stuffed with Stilton or Asiago cheese...I used to make an appetizer of bacon wrapped dates stuffed with an almond - Martha Stewart's appetizers cookbook. I did see one for bacon wrapped skewered shrimp with a mayo sauce - same recipe name.
I just went looking for Angels on Horseback which is oysters wrapped in bacon - here is a link:

The bacon wrap grilled cheese looks amazing!!! Hmmm may have to try that one as I LOVE LOVE LOVE cooking bacon in the oven.

I am partial to oopsie roll bacon and tomato sandwiches when I have time to make the rolls. I am thinking the bacon weave sections will be amazing for these!!!

Yes this is a bacon thread but I am also craving poultry after all of the baked chicken discussion!!! (It may be time for a baked turkey!) Thanks for the update on the bacon wrapped roast chicken. I've baked strips of skinless (gasp!) chicken breast wrapped with bacon several times. They turn out 'okay' but I am never as impressed as I think I should be... (And yes, I keep doing the same thing - expecting a different outcome - and it's always the same...) I DO have better luck with chicken skewers with bacon on the grill but I suspect that it is more from the added flavor of the veggies. The bacon tends to add more flavor to the vegetables than the chicken. I wonder if it would have the same effect (but cheaper) to baste the skewers with bacon grease before/during cooking? Hmmm...... To go back to the bacon wrapped chicken strips... I wonder if they would have more flavor if I added some pepper and onion strips or asparagus spears and then wrapped with the bacon? It would definitely make it more visually appealing - especially with colored peppers.

About the bacon wrapped chicken, I would over lapped the bacon next time because it does shrink and leave gaps.
I can't remember if I posted again that the cold leftovers
were really good the next day.
I think your idea of the chicken skewers with colored peppers would be wonderful, because it doesn't take as long to cook like a whole chicken and the bacon might be a little more moist. But, the whole chic is less prep., about 5 min. if that..lol

I do love red peppers and use them all of the time in everything. They are so sweet and good.... Red onion is also good on the skewers with the peppers.
