An alternative to high-carb normal bread crumbs is panko, or Japanese bread crumbs. They crisp up real nice. Bread a chicken cutlet with egg, then panko, fry in olive oil, top with a lemon-caper-butter sauce you got yourself a nice chicken piccata.
You generally use less, and they are lower in carbs per cup than regular bread crumbs. Granted, they are bread crumbs. So you will get some carbs from them.
