Default 1 Minute Keto Muffin, 5 variations, 4 ingredients

This recipe is from Maria Emmerich's newest Cookbook, The 30 day Ketogenic Cleanse. It was reprinted by Libby at Ditch the Carbs.

Only four ingredients, made with coconut flour.

One Minute Keto Muffin

Ingredients
1 large egg
2 tsp coconut flour
pinch baking soda
pinch salt

Instructions
Grease a ramekin dish with coconut oil or butter.
In a mug, mix all the ingredients together with a fork to ensure it is lump free.
Place the 1 minute keto muffin dough in the greased ramekin and cook in the microwave on HIGH for 1 minute. Alternatively, they can be baked in an oven, at 200C/400F for 12 minutes.
Cut in half and serve.

The thought seems to pop up in my mind, "why are these people trying to make bread, it's like non-alcoholic beer for the alcoholic!" and then I remind myself that I eat A LOT of shirataki noodles

More power to you guys that do the muffins, From the looks of it these are simple and wholesome!

Every once in a while I am craving a Crock Monsieur, ( fancy name for grilled cheese sandwich with ham in the middle). I take this recipe and make it square in a Tupperware. It works pretty well and calms my cravings.

I have used this basic recipe- they are kind of dry, but mixed with our flours they are great or used with something wet like sf jam. They also made a great French toast a couple of times.

I'm equal opportunity. I love both shirataki once a week or so and have "bread" or "crackers" made from flax meal roughly 5 days a week.

Libby's tip was to try only 45 secs as the coconut flour does tend to dry by itself. So mine wasn't dry but the texture more sponge-like than ones I do with flaxmeal and almond. Thought too late that it would have been nice split and toasted (like an English Muffin) or bread for a sandwich as eljohn suggested.
