Default 5 Spice Pork in a Mandarin Pancake

5 Spice Pork with Asparagus and Portabello
Wrapped in a Mandarin Pancake


mandarin cakes:

1 C BRM (Bobs Red Mill)Bake Mix
1/8 tsp. baking powder
1 small Thai super hot chili (minced)
1/8 C fresh Basil (chopped)
1/4 C Heavy Cream
2 ex-large eggs
1/2 C hot water

1/4 C sesame oil

5 spice pork fry:
1/4 C of water
8 asparagus spears (blanched)
16 baby portabello mushrooms (1/8" slices)
2 Tbls. Butter
1/2 tsp. grated ginger
1/2 tsp. minced garlic

6 Tbls. olive oil

1 Lb. center cut Pork Loin
1/8 tsp oarse Kosher salt
1/8 tsp fresh ground black pepper
1/8 tsp. 5 spice powder
1 tsp. szechuan sauce (or more )

Mandarin Pancakes
this is a spin off i did of the breakfast pancakes i did with a savory twist and a little less height(fluff)

combine first 7 ingredients in order and stir in between additions. lightly coat frying pan with sesame oil and heat to about 350° (medium)pour 1/4 of the pancake mix (about 1/3 C at a time)into hot pan and cook until bubbles form(like regular cakes about 1 min)then turn and cook another minute or until golden brown.repeat with remaining mix coating pan with sesame oil each time. set cakes aside


5 Spice Pork Fry

put asparugus and water in small saute pan and cover with lid. cook on med-hi until blanched.pour off excess water then lower heat and add butter,muchrooms, garlic and ginger to pan and saute until tender.slice pork into 1/2" strips and season with salt, pepper and 5 spice powder.heat olive oil in large skillet and add pork when hot. fry on high heat until browned then CAREFULLY! add all of the saute' pan ingredients to the pork,stir fry for 3-4 more minutes and drizzle szechuan sauce over top.give one last stir and add stir fry to cakes and EAT!!!
