Default Almond crusted cheesy chicken!

This is a winner of a recipe, and lots of ways you can make it.

Ingredients:

chicken breasts (about 4 or 5, or do one at a time!)
almond meal
Johnny's seasoning salt
garlic powder
dried basil
dried oregano
olive oil
1 or 2 eggs
sliced swiss american cheese

I recommend microwaving the chicken a bit to make sure it's cooked through, or you can pound it flat so it will cook evenly.

beat eggs with water for a wash

mix spices with almond meal, while you heat the olive oil in a frying pan

dip chicken in egg wash, then coat in almond meal. Fry until cooked over medium to low heat, turning occasionally.

Be careful because olive oil has a low smoke temp! Don't let it get too hot!

Once the chicken is almost done, place the cheese on top and put a lid on it to melt.

We eat this with steamed broccoli. Mmmm!!

Also, you can fry it halfway, the microwave it til it's cooked and the last 40 seconds or so add teh cheese. Makes it gooey!

This sounds really good!

I've started copying recipes into a Notepad file...
something tells me I'm going to have a REALLY long list of good stuff!
