Smile Tilapia w. bacon, mushrooms & onions

I used tilapia today but this recipe is delicious with any mild-tasting fish fillet .. such as sole, flounder, perch, basa .. trout .. or even catfish




Tilapia w. Bacon, Mushrooms & Onion

2 servings

4 slices bacon
2 cups sliced fresh mushrooms (approx. 5 oz/150g)
1/2 cup thinly sliced onions (approx. 2 oz/60g)
400g tilapia fillets (approx 14 oz), fresh or frozen, thawed
Cajun spice, or salt & pepper, to taste

Prep fish fillets by patting dry w. paper towels, then sprinkle all over with Cajun spice or salt & pepper. Set asde.

Fry bacon over medium heat till lightly browned. Remove to a plate w. tongs or a slotted spoon. When bacon has cooled to room temperature, use scissors to cut into small pieces. Set aside.

Keep skillet heat at medium, and do not drain off the bacon fat. Add onion slices and sauté until soft but not browned, two minutes or so. Add sliced mushrooms to the onions and sauté for a few minutes .. till mushrooms have shrunk and starting to turn golden brown. Use a slotted spoon or spatula to remove the mushrooms and onions (so remaining fat stays in the pan). Add to the cut-up bacon pieces; cover w. foil and keep warm.

Increase heat under skillet to medium-high. Add seasoned fish to remaining fat in the pan. Fry for a few minutes on each side until golden and the fish flakes easily with a fork.

Plate the fried fish, then spoon mushroom, onion & bacon mixture over top. Serve immediately.

per serving: 525 cals
prot: 47g
fat: 35g
net carb: 5g
(6.5 carbs - 1.5 fiber)

I receieved a PM from a lovely member who wanted to try this recipe but wasn't sure what I meant by "Cajun spice". Thought I'd post here just in case anyone else out there is wondering the same thing .

There are commercially available "Cajun-style" seasonings ... read labels to make sure it has no undesirable ingredients. Lately I've been making my own seasoning blends. Much cheaper and there's more control over ingredients .. no sugar, starch, hydrogenated oil or other crap I don't want.

Here's my favourite basic homemade Cajun blend:
2 Tbsp finely ground sea salt
˝ to 1 tsp cayenne pepper (can leave it out if you prefer)
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp paprika
1 Tbsp dried oregano
1 Tbsp dried thyme
1 tablespoon freshly ground black pepper

Mix well, and store in a tightly covered container. You could also add one finely ground or crushed bay leaf, if desired

makes 1/2 cup

Per 1 tsp serving : 1g carb - 0.5g fiber = 0.5g net carbs

Thanks for the kudos . I'd love to hear from someone who's tried it .. whether or not you liked it, or made your own tweaks

I made this again recently using pink salmon fillets. They can come out tough and dry if overcooked, especially if there's not enough fat. So I added a small knob of unsalted butter to the skillet right before frying the fish. Cooked approx. 4 minutes per side on medium-high for two fillets roughly 170g (6 oz) each.

Came out great! . To be honest, I didn't think the bacon-mushroom flavour would work with salmon, but it was awesome

YUM! Thank you for the recipe. I cook fish a lot and I've never tried it with bacon. I've fried fish in bacon grease but this look super delicious!!
