Please let me apologize in advance for not having a carb count on this. I'm estimating the whole thing to be around 35, but I could be wrong.

1 lb ground beef
1/2 cup spaghetti sauce (Unico was the lowest carb count I could find)
oregano (to taste)
garlic powder (to taste)
basil (to taste)
1 tub of ricotta cheese (I use whole milk)
2 cups (more or less if desired) mozzarella, shredded

Brown the beef, season and add sauce. Let simmer for about 20 minutes. Place all of the beef in a small lasagna pan (mine is about 9"x9") and cover with the ricotta. Top with the mozzarella and bake at 325F for about 35-40 minutes.

I think this is delicious and I don't miss the noodles at all.

Mmmm, sounds good! It might be even lower carb using dry cottage cheese instead of the ricotta. It's only .8 gm per 120 gm serving (about a third of the tub). It tastes pretty ho-hum, but I think it'll blend well with the hamburger and spices, and it goes nice and gooey when melted.
