Default cauliflower and bacon mock risotto..

I made this today and it was good, I dont know if there is already a recipe similiar on here but thought I would share...
Use a non stick pan if you have one..
1 whole cauliflower head grated,
1 red onion,
Bacon chopped,(could use chicken)
2 mushrooms,
Chicken stock,
Herb of choice, I used dill, but rosemary would be nice.
Butter lots, lol.
Cheese.
Add butter to pan, fry the diced onion and bacon till cooked, add chopped mushrooms, add more butter if dried, then add grated cauliflower, stir for a minute to let the flavour blend, then add chicken stock till it covers the cauliflower, add herb..let cook for a few minutes.then stir, it should be sloppy looking, leave to cook a little till sloppy , but keep stirring, then stir in cheese and a little bit more butter to make it creamier..I suppose you could add a little cream, but it could sweeten it....then serve...
This only took about 15 mins in total, but very filling.

Hi, I couldnt eat it all I found it really filling, but you could have as a side dish maybe with some chicken wings..actually it could be better as aside just to add different texture to your plate...I found it just quick and easy,.
