Default Chocolate Cake

Chocolate Cake

½ cup butter or coconut oil

¼ cup cocoa powder

¼ cup coconut milk

9 eggs

1 ½ cups sugar substitute

¾ teaspoon salt

1 teaspoon vanilla

¾ cup sifted coconut flour

¾ teaspoon baking powder

Frosting
Melt butter in a saucepan over medium heat. Add cocoa powder and coconut milk and mix together. Remove from heat and set aside. In a bowl, mix together eggs, sugar sub, salt, and vanilla. Stir in cocoa mixture. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Pour batter into greased 8x8x2 or 9x9x2-inch pan. Bake at 350 degrees F (175C) for 35 minutes or until knife inserted into center comes out clean. Cool and cover with LC frosting of your choice.

I tried to plug it into to my Master Chef program but it doesn't list coconut flour so I can't tell you. Sure looks good

I have Aloha Nu brand coconut flour. For 2 Tablespoons, it contains 1.5g fat, 10g carbs, 9g fiber, 2g protein, and provides 26 calories. You would have to multiply those numbers by 12 to get the amounts for 3/4 cup of the flour.

Did you try this cake? Is it good? I'd sure like to know, because my birthday is next week, and I've been wanting a chocolate cake.

Hey Nancy:
Thanks for the recipe. I've been on LC for a year now and never had baked a dessert until yesterday. This cake was wonderful, I am sure it would have been even more perfect had I followed it to a tee (I don't use any added sweeteners). I had dessicated coconut, which I ground to get a "flour". I am not sure that is coconut flour...but it worked--I probably could have added more coconut milk.

I frosted it with 2 squares of 70% chocolate, 1/4 cup of cocoa powder, 5 oz of cream cheese, and 1 tbsp of butter.

It tasted like an almond joy! Thanks.

Thank you I made this and it was very good I used unsweet coconut for the flour and it worked great.
