Default Chicken curry

This is mega!!!!! It came out almost Thai stylee more by accident than design and was delicious!!!

1/2 onion
1 pepper
1/2 tin of chopped tomatoes
2 birdseye chilli's
2 tbls hot curry powder
150ml water
6 Tbsp double (Heavy) cream
1 large chicken breast
handful of baby spinach

Prep,
Chop your onion and pepper up (I like mine diced smallish)
Cut your chicken breast up into small chunks

cooking,
Get your oil (I use olive) hot in your wok and caramelize your chopped onion
Once your onion is ready throw in the pepper and stir fry until done how you like.
Add the chicken and stir fry unil it starts to brown off.
Stir in the tinned tomatoes, birds eye chilli's and add the water and curry powder.
Turn down heat cover and reduce stiring occasionally.
Once reduced stir in cream to thicken and throw in baby spinach until it wilts.
Give it a mix, serve in a bowl and ENJOY!!!!

This works out at around 13 carbs but theres enough for 2 portions.

I think they are also called "Thai chilli". they are small, long and thin and very hot!!! you can just drop them in whole while your cooking something up and it will add some heat or if your hard core (Like me) chop them up and eat them in your curry.
