Oh my! Those look fantastic. I think I would roast some sliced tomato until it was caramelized and mix into the sausage mixture too instead of the pizza sauce on the side and some Italian seasoning too. I have some globe zucchini that this would work perfectly for. Thanks for sharing such a great idea!
