Tofu Stir Fries, Tofu Scramble, You can slice it with a cheese slicer, Marinade it in your favorite Marinade Sauce then bake them on a cookie sheet at a real low temp for an hour or so, makes fantastic chips. Tofu loaf, cut them in the shape of flat noodles, put a cheese sauce over them(WALLA) Mock Mac n Cheese. These ideas come to mind off the top of my head, hope it helps. Judy

X-firm tofu crumbled up can be used in place of ground meat for things like tacos or sloppy-joe type recipes. Add spices and seasonings, cook in oil and use lowcarb tortillas or lettuce leaves as wraps. Add grated cheese, avocado slices and the usual taco toppings.

IMVHO the trick to tofu is marinating it. Tonight I drained and sliced my firm tofu in 1/2" slices, and marinated it in a blend of oil and cajun spice mix (watch for sugar and excessive salt. I use "Joe's Stuff" from New Orleans School of Cooking). After about 1/2 hour of marinating, I fried the pieces in oil. Let cool, then tossed in a salad with cilantro caesar salad dressing. The marinated/sauteed tofu is also good wrapped in a tortilla with fresh salsa.

I also enjoy tofu marinated in soy, garlic, wine and ginger, then stir fried with broccoli.
