Default Help!!!!! Veggie Alert

Hello Everyone,

I am on a sort of low-carb diet, but being vegetarian I am having some major problems deciding what to eat. My worst problem is what to eat at lunch at work. I never have time to prepare a packed lunch so have to rely on the local shop for my food.

A low carb bread would be great but I don't understand how to calculate the carbs and the fibre?

Any help?

Take the total carb amount. Subtract the fiber. What is left is the Net Carb amount, this is the number you use.
La Tortilla Factory makes some low carb tortillas, net carbs about 3.
Atkins makes bread, about 3 net carbs per slice.

Unless you're in the UK where, just to be different, what you see is what you get... the total carbs listed are the total you should count.

Making up things in bulk for the week like egg mayonnaise and cheese slices etc to take with you could be a viable alternative to risking shop bought stuff though. There are also quick recipes to make your own low carb bread...

I know it all takes time, but I always tell myself if I can't find 15 mins in a day to take care of my health then a lot more than just my diet is in need of fixing!

Thanks for the replies and the help... I am in the UK, so Carbs are listed. If this is what I should go off then that is great. Does anyone know if instant Mash (which shows as 14g carbs per 100g on the back after mixing) is okay to eat?

If you are in induction the instant Mash would use up 14 of your 20 gms for the day. I guess you could do it and just eat mostly 0 carb stuff for the rest of your intake, like eggs and cheeses, olives, high fiber, low starch vegetables, like radishes. Some pickles are 0 or very low. A brand of marinated mushrooms I buy have 0 carbs after subtracting the fiber, also artichoke hearts. Good Luck.

Do you eat eggs and cheese? Dairy?
If you do, hard boiled eggs from home=easy. egg salad on lettuce=med. easy. Deli salad with cooked broccoli,cauliflower, zuchinni, etc. with olive oil dressing=medium.
I am not familiar with food in a UK shop. I can grab a pack of veggie meat and some cheese, I'm ok. I know it is hard to be veggie. I am not, all the time.
I love olives, avocados, salads, SALSA AND BELL PEPPERS for the chips....

Thanks. I have found a good supermarket near to where I work where I can drive to at lunchtime and get a mixed deli salad which is really nice. I am also having lots of tinned soup! Yes, the meatfree slices are available over here and I occasionally have them. I still have not got round to including any exercise in my diet yet! just a 20 minute walk every day.

How about if you pick a day of the week and cook for the week? Make a pot of LC soup. There are some great recipes out there for LC bread, Tofu Salad Sandwiches are great. I'm not sure whether you are vegan or vegetarian, but hard boiled eggs, cheese cubes, vege jerky is delicious, marinated Tofu Cubes are good, and low carb nutswhich are only a couple carbs per 1/4 cup are a few suggestions, hope it helps, Judy
