Question Yucca!!!!!!

Does anyone know of Yucca Root/Plant?? I have searched everywhere but can not find out what exactly it is. Emeril was cooking yucca chips tonight! The only thing I found is that it's from the LILY family??? If anyone knows, please inform me! Also, have you tried it and is it good? If it's part of a potato family I can't have it...I'm a Somersizer!

The carb count for Yucca or cassava is 23g for a 3 oz serving

Try any grocery stores that cater to carribean/south american/(asian?) markets. You'll likely find yucca & cassava there.

i live in yucca valley... there's tonz of um here ..and ive never even heard of eating them! i might have a snack out in my yard!!

Default Yucca

Yucca chips are sold in many Latin and Central American shops in the US; and some places like Whole Foods and Lawsons also sell them. They are also called Cassava Chips. You can buy the yucca root/tuber at the bigger Giant Eagle, Safeway and Pathmark stores.

Just ask the folks in the vegetable department where the Yucca is. It won't jump out at you; its a root with a dark brown husk; it looks like an elongated brown yam. Usually the store will have cut off the tough outer husk and left the thinner inner husk on for you to peel off.

You can then use a carrot peeler to peel away the brown skin till you get to the white, starchy part. You can boil yucca till tender and serve with butter, a little salt and pepper, or you can add it to stew, or you can fry or roast it.

Yucca is supposed to have plenty of fiber but I've had a hard time finding the carb and fiber for the product. If you can find a place that carries the chip, you should be able to get the carbs off the bag, but keep in mind lots of manufactureres flavor the Yucca chips, which could add carbs. I don't think it's low carb, I wish it was!
