My earliest intro to hocks was a girl I knew who used to buy the plain ones because they were such a bargain, she always just put them in the crock with some liquid, some bay leaves, garlic, onions, peppercorns and a sprig of whatever fresh herbs suited her fancy. I've done them that way ever since, the gelatinous broth is an excellent left over as well.

I went to a Brazillian steak house. The have waiters running around giving you fresh, hot meat. All you can eat! My favorite was the fillet mignon wrapped in bacon. Oh man... I'm stuffed.

Oooh... I just envisioned Chicken Curry with nectarines, topped with a sprinkle of chopped pecans. That sounds kind of good!

B Fried eggs with pastured, local pork sausage, cooked in coconut oil
L grass fed ground sirloin burger with lettuce/tomato/grilled onions, steamed broccoli
D big salad with raw veggies and shredded chicken on top. Chicken was roasted in bacon fat and coconut oil

Snacks: plums, fresh pineapple, raspberries

haha Nancy, you made me feel better about my sack lunch! Although I didn't combine them I do put pineapple in my chicken curry because I don't use any sugars (I put in a can of coconut milk, 2 tbsp curry paste, 1 tsp fish sauce, chicken, carrots, red bell pepper, leek or green onion, whatever greens I have on hand-usually cabbage, kale or chard, and pineapple. It always turns out wonderful and my kids like it too)

Tomorrow I'm going to pick up a nice local organic cabbage and make that caldo de res recipe above, minus potato. I pulled some grass fed beef short ribs out of the freezer (I had no idea what to do with them before this so I'm happy!) so I'll use those.

Also pulled out more of our piggie. I can't get enough of the sausage and bacon-yum! Next time I might buy a whole pig That with pastured eggs in the morning=bliss

I've decided to try to keep the freezer permanently stocked with my homemade breakfast sausage. On nights when I don't have some with dinner, I usually end up feeling hungry no matter what I eat.

I made an interesting skillet dish yesterday... ground beef, spinach, eggs, mushrooms, fresh garlic, and black pepper. I only made it to use up some spinach that was given to me but I liked it so much I went out and bought more spinach today. It is definitely not the prettiest looking dish but oh my was it tasty. Lots of nutrients too.

I left out the potatoes as well but the taste was still outstanding. A squirt of lime just before eating really adds flavor.

I'm sure the ribs will be great in it...I've noticed that my soups and stews taste 10000x's better when I use meats with bones. (I know this isn't news to you guys but it was for me!!)

Roasted German sausage. (sausage made locally, from local pork, minimally spiced)
Carmelized locally grown onion
Sliced, roasted, garnet yam (not really paleo)
Swiss Chard wilted in coconut oil

Then today, I diced up all the leftovers and heated them in a skillet sort of like a hash, and topped it with fried eggs.

Yummy!

I want to have that every day for lunch!
