Default Had an oopsie mishap

Be very careful if you add baking soda to your yolks, I decided to try this to make the batter a bit thicker b/c I ran out of ground flax.

BLECHH, must have added too much. So much for my not measuring.

I finally made these last night and had two of them with a hamburger patty this afternoon. It was pretty good. I was glad I had forgotten the splenda as they were already sweet to me.

They seemed a bit runny to me and they spread out quite a bit on my pan. I think I will buy the mufffin top pans to bake these in.

I thought they would be harder to make than they were.

A few questions:
1. Can you double or triple the recipe safely?
2. Can you freeze them?

Now that I know I can make them, maybe I'll make some meringue drops.

I double the recipe all the time. I'd say you'd only be limited by how many you can fit on a pan, and how many pans you can fit in your oven at one time, although you'll probably have to switch tray positions during baking to make sure they brown evenly.

Once they're baked and cooled, there shouldn't be any reason why you can't freeze them. I haven't tried it yet, but if I expect to have oopsie's to eat during the summertime, I'm going to have to freeze them to use during the months that are too hot to use my oven.

If they seemed runny on the pan, you probably need to beat the egg whites longer - or else you didn't fold the egg yolk mixture in gently enough, and broke the egg whites down too much.

P.S. I stand strong regarding my thoughts on these things that I posted a month ago! Further, I have seen more suggestions for their use - UGH!

OK--I know each to his own but I'll say it again--Oopsie, non-oopsie, rev roll, whatever you want to call them. These are the biggest waste of good eggs that I have ever seen. I am an excellent cook and these are just nasty. They remind me of a bad popover. Eggy, no substance to them. And yes, I have tried storing them over night, wrapped, unwrapped--every permutation known to the universe. I don't see how it is possible to eat a hamburger on these. I think I'll stick with my 100 permutations of the bowl muffin--which by the way, this morning I made with cottage cheese and 2 diced strawberries mixed into the batter, microwaved, then sliced and toasted with butter.

Maybe I'll go smother myself with an oopsie
