APE day #3
lunch:
huge salad - 3 cups of mixed greens, 1 shredded carrot, sliced cucumber, 2 stalks of celery, a small tomato, 1 oz raw almonds, 3 shiitake mushrooms sauteed gently in coconut oil, parsley, and 2 hard boiled eggs
dressing: EVOO and balsamic vinegar
snack:
4 oz raspberries and 1T cashew butter
dinner:
chili made with grassfed beef (beef, coconut oil, onions, garlic, tomatoes, chili powder, cumin, oregano, salt)
raw fennel salad w/EVOO
dessert:
small slice of this squash pie thing. like a pumpkin pie, but with paleo ingredients
I know to some of you my use of olive oil and things like using paleo ingredients to make a pie isn't really "pure" paleo, but they fall within my own guidelines. We've all drawn our lines in the sand somewhere.
This is a helluva lot cleaner than I've eaten before!
