Cravings Busters
Everyone has their weak moments. Chef George Stella reveals low carb secrets to satisfy the most urgent of cravings. His low carb vegetable and "mega-meat" pizzas made with a soy flour crust, "mock" fettuccini primavera using spaghetti squash, fresh fruit margaritas with blueberries, cantaloupe and strawberries, and the biggest one of all, cannoli parfaits with chocolate chip covered ricotta and whipped cream will get you through those tough times. Top 5 Tips
1. Pre-made spaghetti and pizza sauces are discouraged due to their high sugar content, but tomato paste or sauce in a can without added sugar is allowed. Just remember to always read the labels!
2. Once the spaghetti squash starts to resemble strings, it is ready. Take out immediately and put in an ice water bath to stop the cooking process. If not, you'll end up with squash squash, not spaghetti squash.
3. The spaghetti primavera has 8 net carbs per serving, but don't worry about the carbs. Spaghetti squash is full of fiber and everyone needs that!
4. Each cannoli serving is 7 net carbs, but you can always trim your carb count by dividing into six servings and then you'll have 5 net carbs per serving.
5. Fresh fruit is allowed on a low carb diet as long as you pick the right fruit. Honeydw, cantaloupe, strawberries, and blueberries are all great choices.

The best broccoli and cauliflower salad , my recipe......


1 bunch broccoli, cut into real small pieces
1 head cauliflower, cut into real small bite size pieces
8 bacon strips cooked to crumble
1/3 cup chopped "I like red" onion
2 or 3 hardboiled eggs finely chopped

dressing:

1 cup mayo
1/3 cup splenda
2 tablespoons white vinegar
"sometimes I double the dressing recipe" it all depends on how much extra eggs and bacon you add"
mix the dressing with the salad mix and serve, it's great leftover too!

TGIF spinach artichoke dip "in the frozen section" only 1 carb per serving

I use celery to dip in it or it is great just to eat by itself.......
I always use either parmesean or feta cheese to sprinkle over the top of it , on the last 30 seconds of microwaving it, this gives it a much better flavor

Jimmy Dean Hearty Sausage Mini Quiche

1 pkg. Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled and drained
8 eggs, lightly beaten
1/4 cup milkor water
1/2 to 1 cup shredded Cheddar, mozzarella or provolone cheese
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil or butter
1/2 cup thinly sliced green onion
1/2 cup diced sweet red pepper (optional)
1 cup thinly sliced mushrooms or yellow squash (optional)
1 cup frozen Southern-style hash brown potatoes or diced, pre-baked red potatoes (optional)
1/4 cup Parmesan cheese (optional)


Preheat oven to 350 F. In a large mixing bowl, combine eggs, milk or water, cheese, salt and pepper; set aside. Heat olive oil or butter in a large skillet; sauté onions and any optional vegetables desired until vegetables are tender. Add vegetables and sausage to egg mixture; stir well. Place 12 foil baking cups into cupcake pan. Distribute sausage and egg mixture evenly into baking cups. Bake for 22 minutes or until eggs are set. Remove from oven. Sprinkle with Parmesan if desired.

Makes 12 cupcake size servings

Just leave out the ingrediants you don't want,"the ones i highlighted in red,I am leaving out.... I didn't want to change the recipe, since it is not mine....... i'm going to make them without the potaotes or milk....they look good, the photo on the web site....it seems you could freeze them too.
