Mmmm- I love spinach and blue cheese in Summer

Something different today. It's really hot so I'm making a parfait with frozen protein shake cake batter flavor), an ounce of raw cacao nibs (6 net carbs, plus 11 fiber!), and a little sf maple syrup.

Snack will be 2 oz Swiss and cucumber with ranch

Low carb crepes from the wholesomeyum website's recipe with lots of butter. 2 cups coffee. Made the almond and coconut flour 90 second english muffin recipe earlier and probably will use those for very low carb english muffin pizzas for dinner. Since I found those recipes my low carb life is no longer boring!

Yesterday I was out shopping and found such a perfect LC lunch at the restaurant I decided to check out:

It was 3 lettuce wraps of lobster salad, tomato and apple gate bacon
For my side, I picked the asparagus soup.....as it turned out I later saw on their website they have nutritional info. I estimated an asparagus bisque as 15 carbs per cup.....it was 25! Aargh.....after counting carbs for 25 years, sometimes they still fool me.
Oh well, total for day was still 45, so it wasn't terrible.

Frozen Peaches, spinach, almond milk, eggbeaters for protein, vanilla extract and sf vanilla torani, little bit of ice.

14 net carbs, plus 4g fiber

2 string cheese and an oz of cinnamon pumpkin seedz for a snack (5 net carbs, plus 2g fiber)

Yikes- where did may go?

Lunches were lots of variations of:
Cheeses, flackers or very occasional dehydrated vegetable chips ("real veggy chips" not those strangely colored potato chips that call themselves veggy chips), tapenade/baba gnoiush or hummus

Snacks were seaweed snacks, kale chips, pumpkin seeds, tiger nuts, paleo "granola"

Today was different- was out to lunch at a place with handy nutrition info and discovered vegetarian chili was 17 net carbs which is higher than my usual goal of about 12, but was easy to fit in daily totals. It had zucchini, mushrooms, Tomato, a few beans, peppers, yellow squash (no fake meat, just tons of veggies). It was great for an overcast, damp day

Also had 2 oz Swiss as a snack (for protein).
