I was at a conference today, so at the buffet I put down a bed of greens, put three "sandwich guts" on top of that, and had a very tasty & filling lunch. (Currently trying a 1 hour eating window, so this was a real stroke of luck.)

Pro-tip: Put another plate under the first one, so you have a place to put the useless bread!

Lunch today will be bacon, or a breakfast sandwich with egg on a tea biscuit if I feel like waiting until I make them.

Two chicken leg quarters with extra skin! The breast was chopped for the kitties; four cats, eight eyes, noses sniffing the air... what's a girl to do but chop it up for them?

While I was chopping, I did a portion of purple cabbage with blue cheese dressing. Yum yum.

I buy that bagged, pre-shredded stuff because shredding is such a pain, but I only get halfway down the bag before it gets all slimy. Chopping my own cabbage is a good compromise, and cheaper, too.

My custom ham & broccoli bowl with white cheese sauce. Can't get enough of it, and it is so easy to make.

I have seen a couple posts where you mentioned the cheese sauce- thanks for posting recipe. Looks great for me! I LOVE cheese sauce, but my DH is lactose intolerant, so this is perfect for me.

Tried something new today- stumbled upon a bag of "paleonola" at WF and it was on sale. I know you can make your own, but the convenience won me over. Ingredients are squeaky clean, although there is a little honey used- the rest is just seeds, nuts and a tiny bit of dried cranberries. For 1/4 cup, it has just 5 net carbs, plus 2 fiber.

I made a parfait with cinnamon Greek yogurt for a total of 11 net carbs and 2 fiber. It was excellent!
I would buy this again.

Diet Sprite

Snack- 2 oz Swiss, wasabi seaweed snacks

You are welcome! Similarly; there's no point in making a big batch of it as I understand the good, fresh stuff does not keep?

I like layering plain whole milk Greek yogurt with fruit and walnuts. Works great!

The Marilyn Monroe burger special at the place I was visiting for work.

2 patties, cheddar cheese, sauteed onions, bacon, and jalepenos. No bun and no BBQ sauce. Darn good!
