I use a lot of Yves and Litelife vegetarian products. They're soy based and pretty low in carbs. It's important to read labels, though, because many veggie products are actually grain based, and *high* in carbs. I also like using TVP, because it's really cheap and stores well.
I also eat cheese, peanut butter, and about a dozen eggs a week.
