Default Elle's chocolate whipped cream

I get so many requests for this, I decided I just better post it!

Chocolate whipped cream #1 (about 8g carbs total) makes 1-3 servings

1/2 C heavy whipping cream (3g according to Fitday)
1 T Hershey's cocoa (2g)
2 pkts sweetener (2g)
few drops vanilla extract (1g?)

Put all ingredients in a bowl and beat to desired consistency.

Chocolate Whipped Cream #2 (about 8g carb total) makes 1-3 servings

1/2 C heavy whipping cream (3g)
2 T Hershey's Special Dark Cocoa (2g)
2 pkts sweetener (2g)
few drops vanilla extract (1g?)

Same directions.

You can use 2T special dark cocoa for the same carb count as 1T of the regular. It's amazing, and I'll never use regular again! Be aware that the appearance of the chocolate whipped cream with 2 T of the special dark is, well, strange to say the least. It looks like mud! But the taste is DIVINE!

I use a little S/F syrup with splenda and water..heat it add one packet gelatin put it in last... there you got mousse

Do you chill your beaters and bowl? I've seen that recommended in Joy of Cooking (IIRC) to make sure the cream whips up quickly enough to keep from being into butter.

Of course, sweetened chocolate butter would probably be pretty good too...

LOVE this with the Special Dark Cocoa! I still can't use 2 T, though - it looks too much like mud to me and I don't like the consistency as well. But yeah, I agree, no more "regular" cocoa for me, either! I love this frozen.

actually fitday says 1 cup of heavy cream is 3 carbs so in this recipe it would only be 1.5

just a little fyi. if ya'll can get hold of ghirardelli's unsweetened cocoa powder. it is

3 carbs 2 fiber per tablespoon

1 net carb per tablespoon

just a little carb cutting howdy doo

do you have raley's? our local raley's carries it. we also have a ghiradelli's down the road though, along with olive oil, jelly belly, and thompson's chocolate. pretty spoiled for small town america lol.

I have actually changed how I make this.

I use 1/2 C cream, 1 T Hershey's special dark cocoa a splash of vanilla and 1 pkt of splenda. It's not as sweet as with 2 pkts, but I still love it. By eliminating 1 pkt sweetner and 1 T cocoa, the carb count is down to 5g for this recipe. I was using 1g per packet, but I guess the carb count is actually 0.5g per packet.

Elle, if you use sweetzfree or sweetwater you can eliminate all the carbs from splenda.

I've been making something VERY similar to this for a while now. The main difference for mine is I add a pinch of cayenne pepper and a pinch of salt to it. This DOES NOT make it hot. All it does it activate some more of your taste buds so you get more of the flavor.

I got the idea from Alton Brown. He points out that this is the way the Mayan's made choc, and they invented the stuff. If you are nervous just make a quarter batch of this, give it a shot.

I have heard about the cayenne with chocolate. I keep meaning to try it! Thanks for the tip.

I can't spend that kind of money on sweetzfree to save 0.5 g carb (1 packet of splenda) in this recipe. If my CCL or CCM was 10 or something I would probably consider it. I assume the sweetwater is similar in cost? What's in it anyway.
