Default Randy's BESTEST PB/Choc fudge

This is what all fudge should be.
1 lb Smuckers All Natural PB (1 jar)
1/2 lb Butter (2 sticks) (Save the wrappers)
1 lb sugar free powdered sugar
1 tsp vanilla extract
10 oz bag of sugar free choc. chips.

Put some water in a boiler and then pour the choc. chips in a bowl and sit the bowl in the water that should be very hot, not quiet boiling but very hot. Ever once in a while stir the choc. Don't let a drop of water get in the choc. While that's melting:

Add the peanut butter to the sugar free powdered sugar and then add the melted butter, then the vanilla extract. Mix with a wooden spoon until it's mixed well then use your hands to knead the mixture.

Butter a 9" square pan, don't use a lot of butter, in fact you can even use the paper off the butter. Press the PB mixture in the pan. Pour the melted choc. over the PB. Put the pan somewhere to cool overnight. DO NOT put in the fridge. In the morning cut the fudge into squares and enjoy. This is by far the best fudge in the world. Don't use any other PB besides the one listed.

Where do you find sugar free chocolate chips and sugar free powdered sugar? Having those might solve some dilemmas for me.

Default sf stuff

SF choc. chips come from Wal-Mart super center. They are Russell Stover. The SF powdered sugar is Splenda and corn starch. Food proccesor for a minute or so. Make sure it's more sweet than powdery! It's great.

Default does corn starch have carbs

does the corn starch have carbs, and how much is a serving and how many carbs in a serving. recipe sounds awsome going to try it. also a friend was telling me about russel stoffer candys with only one carb per serving. i looked at it at the store sugar free net one carb but when read back panel it has 23 carbs 4 fiber and 18 carbs from alcahol package says since 18 carbs from alcahol you subtract them and only one carb left is this true? or do you know thanks for recipe and good luck

Cornstarch has 29 whopping grams of carbs for 1/4 cup. Red flags went up when I read this recipe - it does sound very good, but I think the carb count is going to be quite high....

Although it sounds good. I think the carb count would be too high for me. I wonder how much corn starch you have to add to the Splenda to make powdered sugar. I saw where the guy on Blaine's Low Carb made his own for a recipe but he did not tell how to do it. He just said to do it.

Ok... I found this:

2 cups low carb sweetener
1/4 cup sifted soy flour

In food processor pulse low carb sweetener and soy flour to make powdered low carb sugar.


CARB COUNT IS:

1/2 cup Soy flour - 8 carbs
2 cups pourable Splenda - 4.8 carbs

****Please correct me if the figures are wrong!!****

Is there any other kind of flour that can be used- like maybe almond flour. I am hypothyroid, and cannot have soy in any form. I may try that.

I don't like soy flour either, and as well as being hypothyroid, everytime I eat it i makes my stomach hurt. I think I will try the almond flour and see if it works. It might make the fudge a little heavier because it has more oil in it. Might have to cut down on the butter. I think I will experiment with it this weekend.

I found this recipe on the Atkins web site. It looks very easy and sounds good.


Atkins Recipe 7- Low Carb Fudge
Absolutely Delicious! Must be eaten very cold.
16 oz. cream cheese, softened
2 oz unsweetened chocolate, melted and cooled

½ C Splenda
1 teaspoon vanilla
½ C chopped pecans or walnuts (optional)

Mix all ingredients together and spread in a foil-lined tray. Refrigerate 4 hours or until firm.
