I've made something similar. I have a sweet protein powder called "nitrotech" and just mixed it with some egg and dropped little balls into oil to make "timbits" and rolled them in cinnamon and splenda.

Mine weren't dry - I suspect because of the egg. To make them less dry you could find a way to fill them with whipped cream, or low carb pudding/jam. Or just put the toppings on top! Or make mini eclairs.. oh man I think I've talked myself into a goodie making day today.

Mmmmmm .... Sounds good. I'm gonna have to try these. I have a sweet vanilla protein I am looking to get rid of, maybe make donuts, eh?

(laughing) I like donuts too! We'll have to eat the ones with whipped cream together when we meet for our "skills exchange"

The first time I tried to make these I was halving the recipe. I forgot that when it came to eggs and added all 3. All I had was a mess.

I tried again this morning with soem slight modifications

2 cups designer whey
1 cup almond meal
2 tsp baking powder
stevia
2 tsp american brown sugar twin
1/4 cup coconut cream (not milk)
1/4 cup almond oil
3 eggs
2 tsp pure vanilla extract
coconut oil for frying

I think the fillers in the splenda are needed. I ended up with a very gooey dough. I added more protien powder, probably 1/2 cup worth. It got to a point it was manageable, though I made donut holes insteado f trying to roll it out. The finished product though was very chewey and kind of blah. My son didn't seem to mind.

It was kind of neat when they were frying. They puffed up when one side was done making them resemble mushrooms or two donut holes stuck together.
