^BlueJ, I had to google that, but that sounds like my favorite curry base. The cashews make a huge difference. I think that's what I'll be making for dinner tonight now!

Dinner last night was curry chicken. It was good, although I didn't puree the veggies and cashews enough, so it was a bit gritty. I think I'll use my magic bullet next time. The new curry powder I got was also really hot. I also found it too heavy on the cumin. I might find some mild powder to cut it down some.

Tonight: Chinese chicken fried cauli-rice.

I wish cauliflower was cheaper. It's funny, people usually use rice to stretch out meat dishes, and I use meat and eggs to stretch out the cauliflower base.

I was exhausted and starvvvvvving yesterday. I wanted to eat and eat, so I made an enormous bowl of:

Cauli rice
Some trader Joe's mix of shaved brussels, kale, cabbage and broccoli
Cheddar cheese and parmesan
Splash almond milk
Onion and garlic powder

It was so good- perfect comfort food to eat in front of a movie before my husband, dog and I all passed out cold.

I had a hard time quenching my hunger yesterday, too. It must have been the strawberries and sour cream I had for breakfast. I finally squashed it at dinnertime with a couple of nice 80% hamburger patties.

I've been down with a sinus infection, so mostly chicken soup for dinner, but tonight I have crab/artichoke salad in an avocado half.

Ate out Mexican for the first time in years and had a chicken fajita salad with guacamole, sour cream, grated cheese and grilled chicken strips over a big bed of shredded lettuce, onions, tomato. Delicious! To drink: Water with lemon.

Barb- were you going for cinqo de mayo or just a coincidence?
We did Mexican bowls- lettuce base, fajita shrimp, sauteed bells and onion, salsa, cheddar and sour cream
