Default need recipe for lunch with a veggie friend

I have a friend who is coming for lunch next week who is on a doctor-imposed vegetarian diet. She is dealing with complications from cancer drugs and cannot stomach meat. Anyway, I want to fix her something she can have and something I can eat as well (instead of high in carbs hummus or the like.) Any ideas?

If she eats eggs and dairy, keep it simple...a nice cheese and herb omelette, maybe with a fresh tomato sauce and a side salad.

If she eats eggs but no dairy, fill the omelette with some roasted fresh veggies.

If she's vegan, how about an antipasto platter from your local olive bar--roasted tomatoes, various olives, marinated mushrooms and artichokes, all complimenting the main course--a nice edamame salad with herbed or marinated soybeans, and maybe some nut meal muffins or lemon ice for dessert.

Maybe as a starter you could make mozzarella sticks, dipped in egg white and parmesan and fried. And then a lighter main course, maybe a big salad with olives, avocado, lettuce, tomatoes, capers, egg?
