Default Use new Trader Joe's stuff

Hi Karen, I bought some new stuff at Trader Joe's yesterday and am trying to figure out a way to make a LC, lowish calorie, high fiber diabetic snack using them. One is the Turkish apricots (dried but not hard) at 4g carbs each and the other is organic whole soybean powder at 8g carbs +5g fiber per scoop(25g). I have been looking at snack bar recipes here but they all had more ingredients than I want. I thought I should be able to mix apricots, soybean powder, nuts, psyillium(?) and some sort of liquid or egg and make either a "raw" ball or a baked one. I want them small to take when I exercise or know I can't get my AM or PM snack and want them to last a long while refrigerated and a short while in my gym bag. I have never been a baker or dessert makerand am not sure how to get the right combination. Am I asking in the right place to get help with this?

I would try raw first, using whey protein isolate and coconut. I would chop the apricots and pulse with the other ingredients in a food processor until sticky, then form into balls.
