I tried the chocolate chipotle rub linked to by Verbena on some caveman beef ribs last night - excellent! I cut back on the chipotle powder and did not add any orange peel - the find ground coffee beans were surprisingly good - this is a new favourite for ribs!

Chocolate Chipotle Salmon Rub

1 tsp. Fresh Coffee Grounds
1/2 tsp. Ground Chipotle
1/2 tsp. Cocoa Powder
1/4 tsp. Valencia Orange Peel
1/4 tsp. Ground Cinnamon
1/4 tsp. Sea Salt
1/4 tsp. Paprika
Mix all of the spices together in a food processor or Magic Bullet. Rub into the flesh side of your salmon before cooking.

This rub can be used for baking, searing, or cooking your salmon on the grill. Store in a sealed container in a cool dry place.

Someone told me that they used a pork butt from the crockpot to make chili after they ate it for bbQ....think that would work great with the cocoa chili recipe!!!! Yum!!!
