Default Wondering what type of "chili" peppers to use

Hi Karen! I am just now realizing I need some better tasting meats if I am going to be successful on this LC plan.

I appreciate all you recipes.

I am wondering what type of "chili" peppers you used with this recipe. Would "serrano" chilies be okay?

I use Thai chilies



but any pepper you like would be fine. Some people like heat, and some like it a little milder.

Hey Samantha! TY Thats an old picture from when I first lost weight two years ago..I have since packed on the pounds BUT and losing again..this time they stay off! BTW that is my youngest son and he is 23...

Default Thai Dipping Sauce - Fire Extinguisher Needed?

I was just chopping up the chiles to put in the food processor when my wife
asked if I shouldn't remove the seeds. She commented that it will be VERY hot
with the seeds.

Should I remove the seeds? She thinks that I'm pretty seedy anyway.

LOL! Yes, the seeds make it vastly hotter. Remove the seeds unless you want it to be extremely hot. And... don't rub your eyes, nose or mouth.

After removing all the seeds, the sauce was a bit too tame. I added back the seeds from another chile and they provided enough 'picante'. The chiles I used were probably much milder than Thai.

The Thai BBQ chicken and dipping sauce were a big hit. I also made the Cotto Pane with balsamic vinegar-laced strawberries. The calorie count must have been huge, but we had a dispensation from St. Valentine.

No, seeds do not make chiles hot. The veins in the chiles contain high levels of capsaicins, so remove the white veins if you want them less hot.

In some parts of Mexico the seeds are ground and used as a thickener. They contribute no heat to a dish. I've made dishes with seeds as thickeners and they have no heat at all.

Huh! I'd always heard it was the seeds. But looking on the Internet I think you're right. They are hot but the worst part is the veins.

I did notice an increase in sauce heat when some seeds were added. This is probably because the seeds pick up some capsaicin from the placenta as they are being removed.

Perhaps eating the seeds AFTER they are washed might be wise.

Trust me -- the seeds themselves have no heat at all. Eat the seeds from any dried chile and you'll find this is true.

Hi,

I meant that in the process of removing the seeds some of the capsaicin-bearing matter from the placenta might adhere to the seed exterior -just as it adheres to one's fingers.
