I made dinner for the family (kids, grandkids and ex) last weekend ~ a yummy thai pumpkin and seafood recipe from Nigella Lawson, served over rice for the family with sides of a big salad and lightly sauteed snow peas.
The recipe called for pumpkin or butternut squash and for ease I had planned to use the pre-cubed butternut at the supermarket, but naturally they were out of it. It's fall though and they had pumpkins, so I bought one which I then had to peel, core, chop up, etc.
I had all these leftover pumpkin seeds I was going to trash but decided "why waste?" and ended up tossing them with some salt, cinnamon, vanilla and toasted sesame oil and roasting until they were a nice golden brown.
Instant appetizer! They were awesome. But awesome with less work sound excellent.
I have never seen Super Seedz locally but there is a Whole Foods across the river so might have to check. The local natural foods place carries some brand of pumpkin seeds, forget the name. They are not bad but not awesome either.
