Default Yummy indoor grill!!

Hey everyone! I can't take credit for this. I got it from a friend who watched it on BBC's the Naked Chef.

Yummy Indoor Grill (my name for it)

1 green bell pepper, chopped into bite sized chunks
1 red bell pepper, chopped into bite sized chunks
1 small onion, chopped into bite sized chunks
1/2 cup broccoli, chopped into bite sized chunks
12-16 cherry tomatoes
1 cup zucchini, chopped into bite sized chunks
5 leaves fresh basil, chopped fine
5 leaves fresh oregano, chopped fine
olive oil
sesame oil
4 cloves garlic, minced
4 boneless, skinless chicken breasts, chopped into bite sized chunks
2 eggs
Salt and pepper to taste

Cut up chicken and marinade in 'fridge for 1-2 hours in your favorite marinade (I used olive oil, reduced-salt soy sauce, minced garlic, and a little bit of brown sugar - I know!). Cut up all the veggies, except the tomatoes. Line a large cookie sheet with baking paper (to avoid sticking). Arrange veggies in groups on cookie sheet, leaving the center for the chicken. Place chicken in center. Sprinkle basil and oregano over the tomatoes, bell peppers and zucchini. Lightly sprinkle olive oil over tomatoes, bell peppers, and zucchini. Lightly sprinkle sesame oil over broccoli and onions. Sprinkle chopped garlic over all pieces. Salt and pepper to taste.

Cook in preheated 350F oven for about 25 minutes. When chicken is almost done, crack 2 eggs over the tomatoes being careful not to break the yoke. Salt and pepper eggs. Return to oven and cook until eggs are nearly cooked through (depending on your preference of runny-ness).

That's it! SOO good. Tastes like a wonderful shish-kabob. You easily add mushrooms or even potatoes for non-LC family or friends. Maybe even crumbled bacon!
