Question Atkins food and Carb count

I'm new to this, but I'm finding things confusing. When I look at the label of Atkins or any protein bar it has a carb count ex 28 g, but only count 2g if you're doing Atkins. Can anybody explain this to me. If the bar has 28 gm why wouldn't I count all of them. I just learned that you take of the fibre count also. If someone could fill me in on how to count carbs properly I would appreciate it. I don't remember that in any of the books that I've read.

From what I can remember you subtract the sugar alcohols too. I know the bars are a YMMV type of thing anyway. They stall alot of people, me included. So you may want to cease on them anyways.
