Chicken Spareribs
This dish tastes like the General Chicken you get at a Chinese restaurant. I serve it with mock fried rice made with reconstituted (TVP) and egg rolls. (Of course you only eat the middle out of your egg roll and leave the wrapper.)
CHICKEN SPARERIBS
4 LBS chicken thighs or breasts (I like the thighs)
1/3 cup soy sauce (use a good brand with 0 carbs)
1/2 cup brown sugar Twin (8 carbs)
1/4 cup tomato sauce (4.5 carbs)
3 Tbs. Cider Vinegar (0 carbs)
3 cloves Garlic finely chopped (3 carbs)
1/2 Tsp. Red Pepper Flakes (like the ones you use on pizza)
1/4 Tsp. Ground Ginger
Line a large baking pan with foil and place chicken thighs in skin side down. Mix the rest of the ingredients together and pour over the chicken. Cover with foil and place in a 350° oven for 1 1/2 hours or until done and tender.
Remove a little of the cooking liquid and thicken it with a little guar gum or xanthium gum and serve with the chicken as a sauce.
Serves 6 - 15.5g carbs for the whole thing and 2.6 carbs per serving.
