was still under the weather and not up to cooking, so we did a second night of asian delivery.
3 pieces yellowtail sashimi
a 6 piece riceless roll- cucumber slices hold tuna inside
crabmeat and asparagus soup
a few bites of boyfriend's triple delight- ate the carrots and mushrooms that he doesn't like. it comes in a simple brown sauce.
I cooked thin slices of fatty steak in coconut oil I also cooked mushrooms cooked in butter to browned poured this over the steak. I also had sauerkraut (that I made myself) and finished meal with some chia pudding.
last nite: spiral sliced zucchini "noodles" with meaty beef red sauce and olives
tonite: BBQ all beef hot dogs, topped with sauteed onions, spicy mustard and sauerkraut
I baked a pan of chicken thighs and ate one plus stole some crispy skin off of the other and stir-fried 2 lbs of fresh spinach (from the farmer) in butter with 2 cloves garlic and salt and ate about 1/2 cup.
I think I'm going to make chicken salad with the rest of the chicken and use the leftover spinach for morning eggs.
An onion and a chopped up pork shoulder chop fried in butter then simmered in some Patak's Tikka Massala sauce! I intended to have this over cauli-rice but the cauliflower had gone off, so I had it on its own - yummy!!
I made a small (a quarter of the recipe) hamburger cheese pie (aka wooshie pie) and had it with cabbage which had been boiled then drained and tossed in all the juices that came out when I cooked the wooshie pie.
Yummy - I'd forgotten how good it tastes!

Last night roasted pork chops and baked stuffed mushrooms. Never tried this before, just filled mushroom caps with almond meal, butter, and garlic and baked. They were so good! I keep discovering new ways to use almond meal. I sometimes mix it with yogurt or sour cream for salad dressing or dip too.
