Flax is wonderful stuff!
Elkay, you can buy flax meal in the health food section of most Australian supermarkets. I get mine in Woolworths. You (and all other flax bread lovers) may also want to check out
this thread in the Aus/NZ forum. It makes a delicious oven-baked flax bread. Not quite as quick, simple and convenient as the single-serve microwave one that AudreyB posted, but worth the little bit of extra effort to make a whole loaf.
I make a loaf of this every fortnight or so, I don't eat a lot of it and it keeps very well in the fridge for that whole time. I also froze and posted a loaf to my Mum interstate and she loved it!
steveFL, flax is a seed and on Atkins you are not
supposed to have any nuts or seeds during the first two weeks of induction. However, you can add nuts and seeds carefully after your first two weeks, even if you stay on induction. I think a lot of people do fine with flax even
during their first two weeks but that's not strict Atkins.
The other thing to remember is that those first two weeks are partly about breaking old habits and mentally adjusting to a new WOE so staying away from something you brain thinks of as "bread" might be a good idea. You want to move away from a "toast and sandwiches" mentality, after all. However, if you feel you're beyond the habit-breaking stage and you don't think flax bread will be a trigger for you, it is a really healthy, really yummy thing to have!
