I just wanted to add that I spotted a new Hood lc yogurt that I bought but have yet to try. The DAnnon ones I saw unfortunatly had gelatin in them and these ones do not so that was nice to see. I hope they are good!!!

I'm assuming all this talk of quiche means no crust. Can someone post a recipe for crustless and onionless quiche?

This is the recipe I have used for years.. it called for a crust but I have since made it without using the same basic formula. I can't remember if I had to adjust the baking time at all or not. Just keep an eye on it the first time you make it because ovens can vary anyway.

Basic Quiche

2 cups any combo of shredded cheese or veggies, or fruit
4 eggs
1 1/2 cups milk or other liquid

Saute veggies if using them. Sprinkle on bottom of pieshell. Beat the rest of the ingredients and pour over the sauteed veggies. PLace pie in a 450 degree oven. Reduce heat to 375 and bake about 35 minutes.

For my favorite combos I like artichokes/mushroom/a white cheese of some sort, Tomato/soy bacon/ cheddar, Broccoli/cheddar, Tomatoes/basil/olives and feta and spinach/cheddar The combinations are really only limited by your imagination! I have never tried it but I would assume since fruit was listed you could add a little splenda, blueberries, vanilla extract, maybe ricotta for the cheese and use a vanilla protein shake for the liquid and make a nice fruity custard.

Ps... forgot to add, for dinners I sometimes add soy sausage/cheddar or soy burger crumbles/green chilies/cheddar to the quiche and serve the latter with sour cream, salsa, black olives and green onions on the side for everyone to sprinkle on top.

The milk has 16 g of carbs, way too much for my CKD. Could I use water instead? Would I use the same amount?

Any liquid would work I think was what the recipe was saying. I have used the recipe for ten years so as my eating has changed so have the liquid I used. I have used milk, soymilk or watered down half and half or cream for the recipe so I am sure whatever would work. I have even used watered down sour cream just because it was all I had at the time. It's eggs and they are basically fool proof. The only mistake I have seen made (which REALLy made me laugh) was I warned a friend to squeeze her frozen spinach dry before adding it, which of course she didn't do, and hers came out like soup.

I made the quiche for lunch today, with soft tofu and water in the blender as the "other liquid". Used 3 oz of the strongest cheese I had, with sauteed garlic, spinach, and mushrooms. Came out great. Thanks for the tip.

Good glad it worked out for you. MMMmmmmMMMMmmmmm tofu quiche! That is something I have been craving like a crazy woman all week long. I think I am going to try my old favorite recipe although it has no egg at all. I had been afraid to try it without the crust but just don't think I can fight the craving any longer. hehe.
