Whoa! That's a lot of fruit! When I saw a diabetes educator about diet she actually gave some good advice from a LC standpoint (though naturally she recommended far higher carb than I can handle and keep my BG in check). But one thing she said that made sense is that I should have no more than one serving of fruit a day - and that a single "serving" was about the size of a ping-pong ball. (though actually I eat far less, one serving of fruit about once every week or two). What you are describing there sounds like several weeks' worth of servings.

Or as a diabetic co-worker's doctor told him, eating fruit was pretty much like pouring pure sugar into his body.

And I'm having trouble seeing where you are getting adequate fat and protein based on your typical day.
