I made some low carb meatballs over the weekend and froze them in small portions so it's fast to grab during the week.

I also just discovered Raos marinara sauce and got a spiralizer. So, tonight I had spiralized zucchini with meatballs and marinara......darn was that delish!

Devilled eggs and a salad.

Yes, felt lazy tonight...lol.

Tomorrow night I plan to make up for it with our weekly t-bone steaks.

we ended up with unexpected guests last sunday, then (expected for one night) guests tuesday and wednesday, then (expected) guests friday and saturday.....
we have essentially been running a bed and breakfast
we are BEAT and have all kinds of leftovers, so will be a little of this, a little if that:

rotisserie chicken
chopped bell pepper, tomato, cuke salad with champagne vinaigrette (no lettuce)
maybe roasted asparagus, roasted potatoes for the fella, nice block of aged cheddar

woot! woot! lots of nice stuff and no cooking and cleaning!

i have been really weak and dizzy the past couple days- i think all the heat/ humidity has drained my electrolytes, so i went with a big bowl of cream of chicken and noodle soup (shirataki). it was really good- hoping it works!

Chicken souvlaki (brochette), marinated in olive oil and lemon and oregano; tzatziki (cucumber and greek yogurt with gaaaarlic); romaine salad with Kalamata olives and Feta cheese.

I have not tried shirataki noodles yet. Intriguing.
