Question ? lemon bars?

I had posted this on another thread but I thought I might try here, someone told me to look here but either I overlooked it or its not here. My husband who is also eating low carb has a birthday comming up March 1st. and I would love to surprise him with one of his favs, lemon or lime bars.....if anyone has an idea or a recipe...i would be most grateful and I am sure he would too. Thanks

Why not try one of the lc cheese cake recipes and add lemon zest, and lemon flavor instead of vanilla. Just a thought. Here is the one I use all the time. I found this in the forum here. Take a look as there is a lemon cheese cake too. Good Luck

Cheese Cake
2 packages 8 oz cream cheese
2/3 c sganulated plenda (I tend to use a little less)
3 eggs
1/4 tsp. vanilla extract

soften the cream cheese and beat all ingredents until good and smooth (you can't beat it too long if you know what I mean)

Pour into pie pan. Bake at 325 for 50 mins. Cool for 20 minutes.

Topping
1 cup sour cream
1 tsp vanilla
3 Table spoons granulate Splenda (again I use a little less)

Mix and spoon on top of "crust"
Bake another 15 minutes at 325. Best served cold.

Thanks so much, this sounds so good that if I don't make it for his birthday I am gonna make it on another day cuz it sounds so yummy....I actually did find a few recipes,for the lemon bars but the carb count is so high. Even though we are 3 weeks into this we are trying to stay at 20 carbs a day. thanks again...this recipe will get used

This is a crazy question and I never would of thought of doing this but it seems a lot of people use their microwaves for baking. But, do you think that this recipe could be made in the microwave? I know it's a long shot but, my oven is broke and every time I see a good dessert recipe I run to the store and buy the stuff. Then I realize I can't bake it!

Post try this one

I found this on another web site, it sounds really easy and I am sure you could just use the almond flour, splenda, and butter crust.
1- 3 oz. Package of sugar free lemon jello
2- 8 oz. packages whipped cream cheese
1 C boiling water
2 tbs lemon juice

stir boiling water and lemon jello for 2 min.
add cream cheese and lemon juice mix well until all lumps are gone
pour into 8 inch square pan
chill and serve
makes 8- 1 inch servings

the recipe didn't come with a crust but I saw somewhere the one I mentioned above. this sounds so simple and you can boil water in your microwave. It also didn't give a carb count but the only thing that would count would be the whipped cream cheese. I haven't tried this yet but I will let you know after March 1st.

I had read the rules listed and couldn't remeber what web site I got it on. I had jotted the recipe down, however I just asked my husband if there was anyway of find a page that I didn't book mark, he found it for me . Sorry again www.fabfood.com won't make that mistake again.

i decarbed alton brown's lemon curd recipe by using liquid splenda rather than sugar, and it came out fine. i think lemon curd is traditionally used on lemon bars. you'd think i would know for sure as i have certainly eaten enough of them in my lifetime . all you need is some kind of sugar cookie type base or a sweetened cracker. i never have been a baker so i'm not even sure where to start for that.

I was thinking about making a cookie like crust with carbquick and then putting the lemon curd on top.
