Default What would be a decent rice substitute?

Dishes that call for rice... what can I substitute instead?

It's a bummer, but nothing! Rice absorbs, and there is really no LC ingredient that absorbs.

If you want to have a rice substitute on it's own, cauliflower is the answer. There's a recipe for Cauli-flied rice in Low Carb recipes at the top of the page.

Post Rice substitute

With all due respect to Karen ,
I've found TVP to be the answer to my prayers in many instances.
I even make a to die for pseudo-rice pudding with it.
Try soaking fine-grained TVP in warm heavy cream and a little AS
before adding it to your favourite baked custard recipe.
There is also a great pilaf recipe on this site.
Try it.I'd love to hear how it went

True Dominique! I thought of that as well as soy grits, but I would hesitate to recommend it to a new low-carber. It's too easy to go overboard with it as it is more carby than the usual LC vegetables. It's more of a maintenance or long term LC thing for me but like everything else, YMMV!

I have no idea what TVP even stands for... So, you all lost me anyway!! LOL!!

It stands for texturized vegetable protein. It's made from soy.

Karen's Cauli-flied rice sounds terrific and I am definitely going to try it.

But I cook a lot of Indian dishes and need something more like plain rice, so I use a recipe or technique I found in one of Fran McCullough's cookbooks. I shred the raw cauliflower in the food processor, just like in Karen's recipe, but I just saute it in butter until it is cooked but still has some texture. We call it Faux Rice and it goes really well with those dishes that we would have eaten with rice BAD (before Atkins diet).
