I made some coconut flour cheese tea biscuits yesterday, and brought them to work so I could have an actual sandwich for a change.

Snack- sea salt caramel almonds (4net carbs per ounce- looking forward to trying these. They are blue diamond).

So it turns out those caramel almonds are pretty blah....I will eat them, but wouldn't buy them again.

Yesterday:
Cucumber with hummus
Baby bel mozzarella
Diet cherry seven up

Today:
Half an avo
Over easy egg
Diet cherry seven up
Snack....most likely an oz of those almonds

Had a driving business trip, so I relied on a hunk of local sharp cheddar from a deli, some giant Slim Jims, and a couple of tangerines. Let me snowshoe all day!

I stopped by the market and got a whole duck that I'm gonna try to make this week. I almost always get some basil there (it's cheap1!) and I found some shirataki noodles in a new place in the store. The don't need refrigeration - at least the pure kind, but you usually find them in the cooler. I found a whole box of them in another place by the Korean gochujang/dry pepper section of all places.

Bone broth with some yellow curry paste, fish sauce - shirataki, tomato, cucumber, jalapeno, basil and slice meats. Little salad too, time to relax for a bit

I made bell pepper and cheese omelets for brunch today. It's slim pickins in my kitchen today; there's a snowstorm and we're not leaving the house. I'm glad I'm pretty good at throwing together meals from the pantry and freezer.

boiled egg.. only used whites.. I dont like the yellow so I gave to my hubby lol..stuffed with tuna mixed with avocado, tiny bit of mayo, red pepper flakes, pickle...

Wearbear - sorry I didn't see your post until now. My recipe is based on this one, but I've made a few tweaks. I use a little less coconut flour and add some xanthan gum and psyllium. That last batch I made was awesome and I could kick myself for not measuring things carefully. I'll make some more today or tomorrow and update that thread.

Robin, we're lucky, we weren't snowed in too badly for Monday morning. The nice thing about living in a condo: not shoveling. This weekend, we're having nice mild temps. I had the windows open yesterday.

Today's lunch: the end of the meat on a rotisserie chicken, with guacamole and salsa. I'll throw the carcass in the crockpot for broth. Tomorrow's lunch = chicken vegetable soup.
