Default Does anyone want to do a "salad a day" challenge for June?

With the Summer heating up, salads can fit into any plan, so I was wondering if anyone was interested?

Summer may be heating up in Texas, but Oregon still feels like spring. I'm not a big salad eater, but wouldn't mind encouragement in that direction. I am in the process of making a batch of Chinese cabbage sprouts to add to salads, which may motivate me.

I'm in. Our house only has A/C in the bedroom, and once the hot weather hits, I'm loathe to heat up the kitchen any more than I have to.

Verbena, I never considered myself much of a salad eater either, until I threw away the rules and got creative with them. Salad, IMO, doesn't even have to have lettuce. Here are some ideas I like (and I'm listing them to remind myself as much as to share with others )
- "bowl" salad - any veggies I have kicking around, chop 'em, throw them in a bowl, add a protein and whatever dressing. Tomato and mushrooms are a common base for this one for me.
- Cauli/broccoli salad - for dinner the night before, cook enough for leftovers. Faux potato salad out of the cauli is nice, but you can do lots of variations. I like cauli/broccoli with a bit of chopped onion, three cheese ranch dressing, bacon, and cheese.
- Cole slaw or broccoli slaw makes a nice salad base whether you want classic cole slaw or something different. Any dressing works.
- Shirataki noodles + spiralized cucumber + spiralized carrot + an Asian dressing makes a nice glass noodle salad.

For simplicity's sake, I'm going to consider veggies and dip a 'salad'. That's something quick I can grab at work. It's exactly what it sounds like - celery, broccoli, cauliflower and cherry tomatoes; the dressing comes in a cup on the side.

The eatingwell site has a "salad a day" challenge article with a bunch of salads listed.
Some are combos I've never heard of!
You'd have to adjust some for lowering carbs, a lot of the ones they list have things like blackeye peas, quinoa, etc.
