Watermelon Sorbet

Level 1
Fruit
Serves: ?

6 cups watermelon flesh, seeded and dice
2/3 cup sugar equivalent (I used Splenda)
1 TBSP lime juice
2 TBSP lemon juice
½ cup water

Combine water, sugar substitute and juices in a saucepan and cook over medium heat until sugar substitute is dissolved.

Place watermelon in food processor and process until smooth. Strain watermelon so you end up with about 4 cups of the juice. Add to the sugar mixture and mix well. Pour into ice cube trays and freeze. When mixture is frozen, return it to the food processor just enough to make it smooth - you may need to add a Tablespoon of water to help the process. Place in a bowl and refreeze for several hours before serving.

* Wait 2 hours after any meal to eat Fruit as a snack.

Cocktail Sauce

Level 1

Serves: ?

3/4 cup sugar-free ketcup (I use Estee)
1 TBSP lemon juice or vinegar
1 TBSP horseradish
1/2 tsp worcestershire sauce
4 drops tabasco sauce (or to taste)

Mix all ingredients together. Keep refrigerated.

This cocktail sauce is as good as any I have bought. I found the recipe on the back of a bag of shrimp.
