Default Two-Meat Meatloaf

RECIPE:
======================
1.5 lb Ground turkey breast
.5 lb Lean Ground beef
1/4 c diced red onions
1/4 c diced green bell peppers
1/4 c chopped zucchini
2 whole eggs (sometines extra egg white to hold loaf together)
Chili seasoning + Salt
1/2 cup LF shredded cheese mix
4 packets of Splenda
12 oz No Sugar Added Tomato Sauce

Mix well in lined or sprayed loaf pan/dish. Mix in half of NSA tomato sauce.
Reserve rest of sauce to top loaf when formed. Cook on 350 F 45-60 minutes
depending on oven type. Should last a few meals. Freezes very well.

Default Bacon Wrapped Cheese Stuffed Meatloaf

I've tried many different meatloaf recipes. Here's mine, which combines all of my favorite meatloaf techniques!

Experiment with different combinations of cheese and sliced meat. Use swiss and ham for meatloaf cordon bleu or pepperoni, mozzarella, and just a couple tablespoons of tomato sauce for pizza meatloaf.
  • 1 tbsp butter
  • 1 small onion, diced
  • 6 small mushrooms, chopped
  • 1 tbsp minced garlic
  • 2 lbs meatloaf mix (a blend of ground beef, veal, pork)
  • 2/3 cup parmesan cheese
  • a pinch of salt
  • 1 tsp smoked pepper (McCormick makes one which you can find in your regular supermarket)
  • 1 egg
  • 1 tbsp soy sauce
  • 2 tbsp heavy cream
  • 2 tbsp chicken or beef broth
  • 8 - 1 ounce cheese slices (your choice)
  • deli ham, pepperoni, or salami
  • 8 slices partially cooked bacon

1. Sautee onions in butter until softened. Add mushrooms, garlic, a sprinkle of salt, and just a sprinkle of the pepper. Cook until softened. Let cool.

2. Mix meat with cooled vegetables, parmesan, egg, cream, soy sauce, broth, a pinch of salt, and the remaining pepper.

3. Halve mixture. Flatten each half into a rectangle. Place 4 slices of cheese onto each rectangle and top with meat of choice. Be sure to leave at least a 1 inch rim around the edges so the filling doesn't leak out. Roll up each rectangle and seal carefully. Wrap 4 slices of bacon over each loaf.

4. Bake seam side down on a rimmed sheet or in a shallow baking pan at 350F for 35-45 minutes or until internal temperature reaches 155F.

5. Remove from oven and let sit for 10 minutes before slicing. This will help keep the filling from oozing out.

Default Bacon Cheeseburger Meatloaf

Credit goes to Paula Dean, for this recipe that I saw on TV. I have tweeked it a little to make it low carb. I am making it right now, it looks and smells great, I will post how we liked it after dinner.

8 oz sharp cheddar cheese, grated (I only had about 4 oz)
2 eggs
1/4 cup mayonaise
1 tablespoon of worstershire sauce
2 tablespoons of mustard
1/4 cup of heinz low sugar ketchup (Paula used reg and more of it)
2 thin slices of onion, chopped (Paula used the french's fried onion rings, she put on top for the last 15 mins of cook time)
4 cloves of garlic (we like garlic, not in Paula's)
10 slices of crispy fried bacon, broken up
1 pound of ground beef
1/2 bag of plain pork rinds, crushed, (Paula used bread crumbs)

Mix together:
Cheese, eggs, mayo, worstershire, onion, garlic and bacon and pork rinds. Take your mustard and ketchup and mix in separate bowl, put half into the chesse mixture, mix well. Add in your hamburger, mix until it all comes together, don't over mix it.
Form into a loaf, bake at 350 for 40 mins. Take out of oven and then add the rest of your mustard/ketchup mixture, put back into the oven for additional 15 mins. (Paula's was nice and crunchy as she put the french fried onions on top of the layer of the ketchup/mustard layer).
