Default Faux Pho

I made this soup over the weekend.....and it was good. my hubby and I had it for breakfast on Sunday morning. When we traveled in South East Asia long ago, we got used to having a noodle soup for breakfast. This really hit the spot

Faux Pho

1 whole chicken or some thighs
1 bay leaf
plenty of water
1 tbs soy sauce
1 tbs fish sauce

Bring the chicken to boil and boil for 1 1/2 hours or until chicken falls from bone. Strain out the chicken from the broth and set aside to cool, just enough to handle.. Pick the chicken meat from the bone and reserve. Chill the broth overnite and then skim off the congeeled fat from the top.

To make the pho.......

Bring the broth to a boil. in a large bowl put some shredded chicken meat, a few cilantro leaves, basil leaves, and then for the Faux pho part... run a zuccini lengthwise over the finest shredder blade on a mandolin. Take a handfull of the zuccini and put on top of the chicken. When the broth comes to a boil, Cover the chicken and veg with the boiling broth.

You can add any garnish you please.... chopped jalapenos, more fish sauce, a little vinegar....sriracha hot sauce... sliced raddish....on and on. Now the Pho we had in Asia was usually beef but it worked well with chicken and the long pieces of zuccini really made me feel that I was eating real pho. The next time I have any beef in the house, I am making it with beef and I will really feel as if I am back in Southeast Asia.

We have this all the time, even in the summers when it is 113 here. I guess I am just a soup gal. I guess that is why I love the food over in southeast Asia so much. Soup is a street food there.....
