Default Another GREAT fish Recipe

I saw the post for the best fish ever and I copied it to my PC to make it next week. (I only have fish once or twice a week). Anyway, last night I had the best fish I have ever had in MY life. Here's the recipe:


Easy Parmesan Fish Fillets
1 1/2 pounds fish fillets, thawed and patted dry
3 tablespoons butter, melted
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon black pepper
salt to taste
3 tablespoons cream
1/2 to 1 cup Parmesan cheese
4 - 5 cherry tomatoes, thinly sliced
2 teaspoons dried parsley

Place the fish fillets in the bottom of an 8" or 9" baking fish. Combine the butter, garlic powder, onion powder, cream, pepper and salt. Drizzle the spiced butter over the fish. Sprinkle the Parmesan cheese over all. (Lots of it is good!) Arrange the cherry tomato slices over the Parmesan cheese; sprinkle the dried parsley over all.
Bake in a 350 degree oven for 30 to 40 minutes. Serves 4. There won't be any leftovers.
Serves 4~ 343 calories, 19 grams of fat, 39 grams of protein, and 3 grams of carbohydrates.

Ok here are my variations: I had a big ole halibut steak that my DH and I shared. I couldn't find my onion powder so I used dried minced onion which turned out great when it cooked. And I used like a tablespoon. I didn't use the tomatoes (though I would for a new flavor, I just didn't have cherry and my DH isn't a tomato fan). The spiced butter gets solid with the cream so you actually spread it instead of drizzling it and then I didn't measure the parmesan. My halibut was only slightly more than a pound and I had to cook it 40 minutes and at the end of cooking I turned my oven to broil and crisped the top Yum! I used about 2/3 cup parmesan. I got the recipe off a low carb recipe site-not sure which one??

Ok hopefully someone trys this and loves it just like me and DH! It was awesome!

for the excellent recipe! I omitted the tomatoes as well and thought it was wonderful. Dh and Dad both liked it very much also. I don't miss cooking low fat!

It is excellent-I am so glad someone tried it. Now I want some too! It was so good with halibut!!

I made it with tilapia - on sale & much cheaper than halibut around here! I bet it would even be good with catfish.
