Default Tuna Tartare

Serves 2

Tuna Tartar

6oz/300g fresh tuna
2 tomatoes
1 tsp fresh grated ginger
1 tbsp olive oil
1 tsp sesame oil
1 tbsp finely chopped chives
1 tbsp finely chopped coriander
1 tsp soy sauce
1 tbsp limejuice
Salt and finely ground pepper

Scald the tomatoes so you can peel them, remove the juice and seeds then dice them. Dice the tuna very small and place in a large bowl. Add the diced tomatoes, herbs and ginger and mix together. Add the olive oil, sesame oil, soy sauce salt and pepper, and mix well.

Divide the mixture between two plates, sprinkle over the limejuice, and serve immediately.
